This recipe caught my attention because it has two of my favorite ingredients in the title…bacon and cheese. Seriously, how can you go wrong with bacon and cheese!

Now I had to make a change from the original recipe. I told Michael what I was making. He asked about what was in it. His eyes lit up when I told him all the ingredients. Then he asked how many eggs and how much bacon. When I told him, he immediately decided that the amount of bacon needed to be doubled. And well, in our house, you can never have too much bacon, so it was a hit!

PSA: If your house is anything like mine, you might want to buy two 12 oz pkgs of bacon and make ‘em up so that will actually have a pound left after everyone snags a piece or two while you are making it!

You can also chop up a green pepper and add it in. The original recipe called for it, and I am sure it would add great flavor to the mix, but alas, my small town grocery stores didn’t have one when I went to get the ingredients for this recipe. So, we had to go without this time.

Crock Pot Cheesy Bacon Casserole

A delicious breakfast casserole everyone will devour!

Ingredients

  • 1 Tablespoon oil
  • 1 onion chopped
  • 32 oz pkg frozen shredded hashbrowns, thawed
  • 1 lb bacon crisply cooked and crumbled
  • 8 oz pkg shredded Cheddar cheese
  • 8 oz pkg shredded mozzarella cheese
  • 12 eggs
  • 1 cup milk
  • 1 Tablespoon dried parsley
  • 1 teaspoon dry mustard
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • Optional: 1 green pepper chopped and additional shredded Cheddar cheese

Instructions

  • Pour your oil in a skillet and heat up over medium heat

  • Saute your onions until they are translucent

  • Add in your hashbrowns stirring and cooking until golden, remove from heat

  • Put half your hashbrown mixture in your greased crock pot

  • Sprinkle your cheeses, bacon and green pepper (if using) on top

  • Add in the remaining hashbrowns

  • In a large bowl, beat your eggs with your milk, parsley, mustard, salt and pepper

  • Pour over everything in your crock pot

  • Cover and cook on low for 5-6 hours, it is done when it can pass the “clean knife test”

  • Serve with extra cheese sprinkled on top

Slow Cooker Recommendation

Since this is a Crock Pot Cheesy Bacon Casserole, you know I had to use my 9 x13 casserole slow cooker made by Crock Pot. If you don’t have one of these bad boys, go ahead and get one. Don’t worry, I’ll wait. 😉 If you want to make this recipe before yours arrives, then I would use a 5-6 quart slow cooker.

      I haven’t tried making this in the oven, so I can’t say for sure. I did a Google search for egg and hash brown casseroles. I found a variety of oven temps and cooking times. The most common ones I found were either 350 or 400 degrees Fahrenheit and cooking times from 25 to 55 minutes. So, if I were to try it, I would pick one of those temps and watch it closely after the 25 minute mark while allowing enough time for it to take closer to 55 minutes. If you give it a try, let me know goes!

      I have not tried it yet, but I would think so. If you make it in a crock that is oven-safe, then I would reheat it in the oven. If not, then I would cut it into serving size pieces, arrange on a serving platter and reheat in the microwave just before serving.

    I have 2 slow cookers–a 3 1/2 qt. round and an 8 quart oval. Do you think it will just be done sooner in the larger one or should I cut it in half and use the smaller one. Would your answer apply for most of your recipes? Thanks!

      Hi Gayle,

      That is a basic guideline, yes. Most recipes will likely cook fast in your 8qt. It is recommended a slow cooker be at least 1/2 full to cook correctly 2/3 or more for best results. Enjoy!
